1½ lbs. lean ground beef
1 tsp.
salt
1/8
tsp. black pepper
1 Tbsp. chopped parsley
4 thinly sliced onion rings
4 thin tomato slices
4 thin slices cheddar cheese
4 tsp. Dijon-style mustard
4 tsp. pickle relish
4 tsp. mayonnaise
4 crisp lettuce leaves
4 large hamburger buns, toasted and buttered
(this is a must)
Preparation
Heat Broiler.
-MIX
In Med. Bowl meat with salt, pepper and parsley. divide into 8
portions.
-Flatten each portion out to make rounds 4-5 inches in diameter.
-Top 4 patties with with 1 slice onion, 1 slice tomato, and 1 slice
Cheddar cheese.
-Top the other 4 patties with 1 tsp. mustard, 1 tsp. relish, and 1 tsp.
mayonnaise.
Place the relish patties over the other patties, carefully enclosing all
the relishes inside, press firmly to remove any air bubbles, seal edge
well.
- Broil or grill to your liking, about 4 minutes on each side.
-Top with lettuce and place into prepared hamburger buns. Serve
immediately.

When you put the relishes inside
of the hamburger, it not only make serving much simpler, but the meat stays
juicier. You can broil, pan fry or cook them on the grill, just be sure to
seal the edges well.
TIPS:
Patties may be prepared ahead and refridgerated until
ready to serve, up to 6 hours ahead of time. If made any earlier then that
the filling may start to taste "OLD".
